Apple, Pear, and Cheddar Salad

     We all get tired of eating the same “health” foods every night.  So here’s a fun salad to mix up your eating routine.  However, if you are trying to watch your carbs at night .. then maybe it should be used at lunch! 

Fast & Easy Dinner: Apple, Pear, and Cheddar Salad

   
 Lately I’ve been eating more salads for dinner because they’re healthy and filling without being heavy. Making a salad requires minimal effort and maximum creativity, as there are hundreds of different ingredients that can top a bed of pristine greens. Crisp fruits like apples and pears provide a delicious sweetness, while toasted nuts add crunch to this scrumptious salad recipe. Apple, Pear, and Cheddar Salad with Pecans
From Cooking Light magazine

1 cup apple juice
2 tablespoons cider vinegar
1 teaspoon extravirgin olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
10 cups gourmet salad greens (about 10 ounces)
1 cup seedless red grapes, halved
1 medium McIntosh apple, cored and cut into 18 wedges
1 medium Bartlett pear, cored and cut into 18 wedges
1/4 cup (1 ounce) finely shredded sharp cheddar cheese
3 tablespoons chopped pecans, toasted

  1. Place apple juice in a small saucepan, and bring to a boil over medium-high heat. Cook until reduced to about 3 tablespoons about 10 minutes.
  2. Combine reduced apple juice, vinegar, oil, salt, and pepper, stirring with a whisk.
  3. Combine greens, grapes, apple, and pear in a large bowl. Drizzle with apple juice mixture; toss gently to coat. Sprinkle with cheese and nuts.

Serves 6.

     If you want to stay on your healthy eating plan then it’s VERY important that you find fun and new recipes so you don’t get bored.  If you don’t want to search online then I would go out and purchase the “Cooking Light” cookbook.  I have this one myself and recommend it to all my clients!
