Halloween is over, but pumpkin is still in season, yay! Let’s be honest pumpkin is always at the market, we just consume more due to the holidays. Thanks Hallmark.
I would like to clarify that eating real pumpkin, AKA anything not from a can is a great way to eat pumpkin, but who really likes to cut apart a pumpkin unless they’re craving it? So canned seems like the best option because you should be eating pumpkin ALL year long not just in October and November. Here’s a few reasons why:
1. Did you know that half a cup of canned pumpkin counts at 350% of your daily vitamin A intake?
2. Beta-carotene, great for your eyes and it’s so heavy in anti-oxidants that it’s known to fight cancerous cells and be an anti-aging agent.
3.It has 5 grams of fiber and 2 grams of protein! So, it keeps you full while replenishing your muscles, SCORE!
I’m sure you’ll all be eating some pumpkin pie this Thanksgiving, so go ahead and treat yourself to a second piece. Be careful though because that evaporated milk in most pumpkin pie’s can make you put on those few extra holiday pounds. I personally can’t eat regular pumpkin pie because dairy and I aren’t friends so I make a dairy free pumpkin pie and it’s AMAZING!

Instead of evaporated milk use unsweetened Almond milk and cook it for 15 min extra and you’re done!
