You’re going to drink tonight. Let’s just all face the reality. Yes, it’s Thursday, BUT it’s also Halloween. How could you not celebrate…with just one…okay two cocktails.
I’m going to have a few. I don’t want my waistline paying for it so I’m going to take 2 spook-tacular cocktails and make them skinny!
I know. BEST IDEA EVER!
Do you like rum?!
I do!
This weekend I had a Bacardi Zombie.
Regular Bacardi Zombie Cocktail recipe:
1 ounce Bacardi Gold
1 ounce Bacardi Silver
1/2 an ounce of sweet and sour
1/2 an ounce of grenadine(for color and UNNECESSARY calorie intake)
and a splash of orange juice
This was delicious, but WHOA sugar and…just WHOA!
So, to get it “Skinny” do this:
1/2 an ounce of Bacardi Gold and Silver(instead of an ounce each).
squeeze:
one lime, one lemon and an orange.
Put over ice, and voila!
It’s a skinny zombie, all zombie’s are skinny since they’ve been dead! Hello!
HAHAH, you get it!
Now, you’re probably saying, “what if I’m making a big batch for a party?” Well, here’s:
Dark and Stormy Death Punch
Regular Dark and Stormy Death Punch Cocktail:
1 20-ounce can lychees in heavy syrup
1/4 cup thinly sliced peeled fresh ginger
16 brandied cherries
1/4 cup superfine sugar
1/2 cup fresh lime juice
12 ounces dark rum
Three 12-ounce bottles ginger beer
Ice cubes
Now, “Skinny” Dark and Stormy Death Punch Cocktail:
SKIP the lychees in heavy syrup. At international stores they have fresh lychees. These make do and you save A LOT of calories.
This may sound weird to some of you, but instead of using a full can of ginger beer, do: 6 ounces ginger beer and 6 ounces water. Don’t worry, it’ll taste the same! This is compliments of my Hispanic mother who loves to water down coke because, “In Nicaragua we couldn’t drink a whole coke, we had to share.”
OMG! I know my Halloween Costume, my mother!!!
