If you had a high carbohydrate weekend then the best thing to do is to remedy it with some low carb meals and get back on track. On top of eating low carb, drinking loads of water is always a great way to flush water, and excess salt from your body. You can do the old Jug O water trick and carry one around with you to ensure you’re drinking enough. Here’s a great low carb recipe to add to your stash of clean eating. Ingredients for Coconut Curry Chicken Soup
1 cup finely chopped cauliflower1 tablespoons coconut oil or olive oil
1 onion, chopped
1 clove garlic, minced or you can use the pre cut garlic from a jar
1 tablespoon curry powder (any mix is fine)
1 teaspoon ground cumin
4 cups chicken broth (homemade is best)
3 cups chopped or shredded and cooked chicken (I prefer mine to be chicken breast)
1 lime – juiced
1 can full fat coconut milk
Unsweetened coconut flakes and chopped cilantro, for garnish
Salt and pepper, to taste

Heat in a pot or dutch oven. Add the coconut oil or spray olive oil and sauté the onions until translucent. The olive oil spray or coconut oil spray with cut down on some of the fat and calories verses using a chunk of coconut oil.
Next, add the garlic and cauliflower to the onions and cook for another 5 minutes.
Add the spices, and stir for another minute then add the chicken stock. Cook for another 10 minutes.
Stir in the coconut milk, lime juice and chicken breast. Simmer until the soup is hot.
Garnish the top with coconut flakes, and cilantro.
If you already have prepped chicken (which I make weekly) , then this recipe is a SNAP! If not, it will just take you a little longer. To ensure that the chicken is tender, I recommend cooking it in the chicken broth before hand. Then, use the same chicken broth in the recipe for extra flavor!
