Cold and hungry with no time to cook? Use this delicious low carb recipe to fill you up in the cold winter months. This balsamic beef is simple, paleo, flavorful, gluten free, and dairy free! This shredded beef is great on sandwiches, on salads, as a main course or even as a breakfast topping over eggs.

Ingredients for Low Carb Slow Cooker – Balsamic Beef
- 4-5lb beef chuck roast – I prefer grass fed beef
- 1 cup beef broth (gluten free and organic)
- 1/2 cup light brown sugar (you can also cut this in half if you want to make it even lower in carbs)
- 1/4 cup balsamic vinegar
- 1 Tbsp soy sauce (gluten free)
- 1 tsp kosher salt
- 1/4 tsp crushed red pepper flakes
- 3 cloves garlic, pressed
Directions
Mix all of the ingredients together except the beef (leave that to the side). Next, place the mixture in the bottom of the slow cooker and turn it to low.
Place the beef in the crock pot with the mixture and allow it to cook for 6 – 8 hours. I always like to buy a larger roast so I cook mine for 8 – 10 hours.
Fitness Tip: If you decide to decrease the sugar in the recipe to half, you may also need to decrease the vinegar a bit.
This recipe makes about 5 servings (6.4 ounces each if you are using a 4 lb roast). If you decide to use all of the sugar, that breaks down to 20 grams of carbs per serving. If you cut the sugar in half, that leaves you with about 10 grams of carbs per serving.
