Great low carb recipes can be a savior during busy weeks. This amazing recipe was flavorful, filling, and easy! Follow the instructions below, then set it, forget it, and return home to a full cooked meal!
Ingredients for Low Carb Pot Roast
* 2-4 pound roast (I prefer grass fed)
* 1 onion chopped
* 1 packet of powdered ranch dressing mix. I use a gluten free dairy free brand.
* Spray olive oil or regular olive oil
* 3 – 4 carrots – chopped in 1 inch pieces
* 2 – 3 stalks of celery (optional) – chopped in 1 inch pieces
* 3 large potatoes (optional) – Cut into large 1 inch cubes
* Xanthan Gum (optional)
* 2 cups of organic beef broth
*Salt and Pepper for Seasoning
Instructions for Low Carb Pot Roast
1.) Heat a skillet to medium heat. Spray it with olive oil. Sprinkle pot roast with pepper and light amount of salt. Add the pot roast to skillet and brown on all sides (roughly 4 – 5 minutes on each side).
Fitness cooking tip – If you want the broth to turn into a gravy as the roast cooks, Use 2 teaspoons of the xanthan gum (also known as Gar Gum) in 1/2 cup of broth. Mix them well using a whisk. Then add them to the remaining broth with dressing (in next step). Xanthan gum is a great additive because it has 0 net carbs, while providing a gluten free thickening agent.
2.) Add beef broth, and powdered ranch dressing to a bowl and whisk so they are mixed well (also add roux to thicken into gravy). Then add them to the crock pot. Toss in the onions, celery, potatoes (optional) and coat them evenly.
This is the gluten free, dairy free ranch dressing mix I used to keep this a paleo recipe. It made by spicehunter.com . I found it at sprouts and I also saw that walmart sells it.
3.) Turn crock pot to low then add the roast. Seat the roast in the middle and cover with broth. The veggies can sit around the roast. Put the top on and allow to cook for 8 – 10 hours. You may want to add more time if you are using a larger roast.
