This recipe takes the cake for one of the best low carb combinations ever! It’s definitely not low fat BUT it is gluten free, dairy free, low carb and of course paleo. It’s only 6 ingredients but it’s so delicious, your family and friends will think you slaved for hours to make this amazing combination come to life.
Prep time is only 15 minutes! I have made some simple alteration to keep this a true “paleo recipe.”

6 organic chicken breasts. Since these are organic they are a bit smaller then the non organic. SO keep that in mind. If you decide to go with non organic breasts make sure you aren’t choosing huge pieces of meat OR you use less breasts when making this recipe.
1 Package of Bacon – I prefer the all natural, no nitrate bacon. It has the best flavor and the least amount of added salt.
2 Avocados – Diced and cubed
5 -6 diced green onions
2 – 3 tablespoons of vegannaise OR mayonnaise
Additional salt and pepper – add to your liking at the end.
Cooking Instructions for Paleo Chicken, Bacon, Avacado Salad
* Throw your chicken on the BBQ for flavorful meat. Add additional seasoning to the chicken breast. You can keep it simple with salt, pepper, and onion OR you can do my favorite all around fitness spice…. Herbamare 😉
* While the chicken is cooking, place your backing on a cooking sheet and put it in the oven at 400 degrees f. After they are crisp on both sides. Remove them from the oven and place them on a paper towel to soak up access grease.
* Chop up the green onions and the avocado. Add in the mayo a little at a time. Stir, taste and adjust. Last add the bacon and chicken. Fold them in nicely. I would wait until they have cooled a bit.
This low carb recipe is great alone, as a topper on a green bed of lettuce, in lettuce cups alone, as a side dish, or even as a pre or post snack for the gym! It’s a catch all! Keep it on hand for game days, family events and even parties and holidays. Share it with you low carb crew and pass it out at your WOD workouts (use the print / share link above).
