Mangos are in season and they provide a naturally sweet way to consume carbs while adding new flavors to your plate. This recipe for mango lime chicken is a great way to spice up your dish, while still keeping it low calorie, gluten free, and healthy! The key to getting a great all around flavor, is blending the ingredients in a blender and allowing the natural acids of the fruit to marinate the chicken to perfection!
Ingredients for Mango Lime Chicken
- 2 pounds of chicken breast
- 1/2 Garlic clove
- 1/4 cup Red onion or shallot
- Chili pepper (optional topping)
- 2 tbsp Chili sauce or sriracha
- 1/4 cup Honey
- 1 tbsp Lime juice
- 1 cup Jasmine rice or cauliflower rice (cooked)
- 1/4 tsp Black pepper
- 1/4 tsp Sea salt
- 1/4 cup Olive oil or XCT Oil
- 1/4 cup Orange or pineapple juice
- 1/4 cup White wine
Instructions
Start by peeling and cubing your mango into pieces, or buy it already prepared in your local supermarket to save time.
Next, blend all the ingredients together, minus your topping (chili pepper and cilantro).
Rinse your chicken with cold water and remove extra skin or pieces of fat. Place chicken breasts in a ziplock bag and pour in marinade. Marinade for as little as 2 hours but no longer than 24.
When you’re ready to cook, preheat your oven to 425 degrees. You can also choose to grill your chicken. I always grill on low to keep the chicken moist. It just may take longer (generally 15 – 20 minutes on each side). To keep the flavors surrounding the chicken the whole time, wrap in foil so the marinade doesn’t cook off.
If you’re using the oven, place the chicken in a glass baking dish with extra marinade over the top. Bake for 20 to 30 minutes. If you want a little extra crisp, turn the oven to broil for the last 1 – 2 minutes.
Serve your chicken sliced over a hot bed of rice or cauliflower rice. Add in sliced red onions (optional), and additional cubed mango (optional).
Garnish your dish with chili flakes, chopped cilantro and squeeze lime juice over the top. Add salt and pepper to your liking.
