Get all the warm feelings that go with winter food, without all the calories! This crock pot chicken soup is easy, low glycemic (slow carb), low calorie and very filling. I made this recipe on a whim and to my delight it worked out so well that I decided to post it on the site! Turn off your online gambling game and read the rest of this recipe. Ingredients:
Use 1 package (after cooking it in the microwave for 3 Mins)
2 Chicken Breasts (thawed)
Trader Joe’s Spray Olive Oil ( or a teaspoon of your own)
Better Then Bouillon ( or 32 oz of chicken broth)
3 Stalks of celery
2 Peeled Carrots
Dried Dill (optional)
1 Cube of Dorot Basil
1 Cube Of Dorot Garlic (or one clove)
Add 4 teaspoons of Better then Bouillon with 4 cups of water (32 oz of chicken broth) to the slower cooker and turn it on high.
Add in 1 cube of garlic ( 1 clove) and 1 cube of basil.
Cook brown rice in microwave (total of 3 cups per bag) and add it to the slow cooker.
In a pan brown the onion on medium heat with a couple sprays of olive oil. Throw them into the slower cooker once they are golden brown.
Brown chicken in pan on both sides with a couple sprays of olive oil. This should be a light brown and the meat with still be raw in the center. Add to slow cooker.
Cut and peel carrots and add them to crock pot.
Cut celery and add it in as well.
Add in 1 teaspoon of dried dill.
Add fresh ground pepper (roughly 1/2 teaspoon).
Let the crock pot cook the chicken (in 2 whole pieces) for 30-40 minutes on high.
Take the chicken out of the crock pot and shred. Add it back into the slow cooker, turn it down to warm and wait 5- 10 minutes. If you are going to leave this recipe cooking longer then turn the heat down or add the rice 30 minutes before eating. Serve and enjoy!
