Through my career as a personal trainer and my own food allergies I saw how food has affected our society. Gluten was added to everything and dairy was interweaved into every recipe, every dining experience and multiple health foods. I thought it was challenging when I had to eliminate gluten from my diet due to Celiacs disease, but the real challenge was removing dairy. If you have an intolerance to either diary or gluten, this article is a must read. Why Society Has Become Intolerant to Gluten Regardless of Genetic Make Up
Oprah’s new Weight Watchers Quote is, ” I get to eat bread everyday.” While I understand her love for bread, I believe that modern sources of gluten have become so tainted that even people who wouldn’t normally be genetically intolerant, have become sensitive to the well known pesticide they use on all gluten and grain products known as “Round-up.” Yes you heard that correctly! That horrible pesticide you use to kill your weeds is all over your grains, not just wheat products!
The question I get ALL THE TIME from clients is, “how could we as a society have eaten grains for so long without any issues? Why weren’t our grandparents allergic?” The sad news is, these new pesticides weren’t introduced in high amounts until the 1980’s. That means your grandparents weren’t eating them for the majority of their lives. In all systems, pesticides have a building process. As the chemicals increase in the body and store in the tissues, the allergies increase. With it also comes a whole host of other issues.

According to Dr. Stephanie Seneff of MIT who has studied the issue in depth and who I recently saw present on the subject at a nutritional Conference in Indianapolis, desiccating non-organic wheat crops with glyphosate just before harvest came into vogue late in the 1990’s with the result that most of the non-organic wheat in the United States is now contaminated with it. Seneff explains that when you expose wheat to a toxic chemical like glyphosate, it actually releases more seeds resulting in a slightly greater yield: “It ‘goes to seed’ as it dies. At its last gasp, it releases the seed” says Dr. Seneff.
According to the US Department of Agriculture, as of 2012, 99% of durum wheat, 97% of spring wheat, and 61% of winter wheat has been treated with herbicides. This is an increase from 88% for durum wheat, 91% for spring wheat and 47% for winter wheat since 1998 (source).”
The Undeniable Link Between Gluten and Dairy That We Missed for Years
When immune systems become stressed the body can’t read food correctly. In this case, the protein in dairy is misinterpreted as the protein in gluten. This mimicking process is known as “cross reactivity.” People who have an intolerance to gluten always have stressed immune systems so this reaction is all too frequent. While removing it from the diet for several months can give the person relief, it doesn’t mean that cross reactivity disappears. This reaction never disappears and is a life long condition.
Why You Can’t Seem to Stop Eating Dairy
I’m not a huge fan of dairy, in fact I actually think it’s the devil. I don’t eat it personally, but my real hatred comes from years of seeing what it’s doing to my clients. I saw people stricken with arthritis, joint pain, digestive issues, and cortisol problems. After training literally thousands of people, I began to see a pattern. All the clients with horrible digestion, unavoidable seasonal allergies, and debilitating joint pain, ALL ate a high amount of diary. Yogurts, cheese, ice cream, cream, and even protein shakes. These people all seemed to slowly be losing their mobility. While it could affect any part of the body, the majority of my clients mirrored the intolerance in their legs. Usually their knees and hips.

Dairy contains a protein known as casein (yes all dairy even organic). In the body casein acts as an opiate to the brain (known as caseomorphin). This causes an actual addition to dairy.
That’s deep! Dr. Neal Bernard nailed it! After years of struggling to get my clients to cut out diary, theirs finally a scientific answer as to why it’s so hard! Not only that, Bernard also mentions that cheese is the one of the worst since all the moisture has been drained out of the product. Cheese transforms into “crack” for your brain. When the levels of caesomorphin drop, your body begins to search for more to get its “fix.”
Why is Dairy Affecting the Body and Causing Diabetes?
When you eat dairy it increases immunoglobulins (antibodies). When this protein (antibodies) gets into your blood (through leaky gut syndrome), the body confuses the protein as insulin. This signals the pancreas. Some research suggest that increased dairy is contributing to the increase in diabetes. Especially in countries where dairy intake is high.
This article and information on the link between gluten and dairy should help to solve some frustrating questions. Through this research it’s certainly shed some light and connected a lot of the dots.
