Eating low carb can be a challenge especially when you want something sweet! This low carb chocolate mouse is both filling, and sweet! It hits the spot without throwing your whole health routine out the window. It’s also gluten free!
I have made some alterations to the original recipe but it still has all the brain boosting power due to the coconut oil, and it’s considered sugar free! It’s sure to give you a jolt of energy without the robbing effects of traditional pudding choices that are packed full of sugar.
Ingredients for bulletproof and paleo chocolate mousse
2 cups of coconut milk (full fat)
1 tablespoon of gluten free gelatin ( you can use regular if you aren’t gluten free)
1 tablespoon of coconut oil (XCT oil is my favorite)
1/3 cup of Ghirardelli unsweetened cocoa powder (this brand is a MUST)
2 tablespoon of hardwood xylitol
2 tablespoons of grass fed butter
10 – 15 drops of sweetleaf liquid vanilla stevia. Caution: Everyone tastes stevia differently. Add a couple drops at a time, stir and test. You will need to see how your taste buds pick up on the sweetness.
Fitness Tips: The liquid stevia doesn’t have additives that spike blood sugar. The powders are ALWAYS cut with something sweet to take away the natural bitterness of the stevia leaf. I have tried about 6 different brands and this one is BY FAR the best (without added things such as dextrose etc).
Instructions for making Low Carb – Paleo- Bulletproof Chocolate Mousse
Milk half of the coconut milk (1 cup ) with the xylitol, and gelatin into a saucepan. Heat on medium heat while stirring frequently. Allow the gelatin and sweetener to dissolve.
Fit Tip: If you have high-quality pots and pans, this may need to be cooked over medium-low heat.
Next blend the other ingredients of the bulletproof chocolate mouse – vanilla powder, 1 cup of coconut milk, cocoa powder, vanilla stevia (taste test your stevia as you go), and coconut oil in the blender (or Nutri bullet in my case).
Mix the fluids together then blend once more.
Dish the mixture into portion sizes or leave whole.
I used a muffin tin to make my portions uniform.
Lastly, place the muffin tin (our the whole portion) in the fridge and allow the chocolate mousse to firm up. This should take 2-3 hours.
