Ok, I’m definitely on a polenta kick. This stuff is great in the morning and has less carb in a 5th of a tube (from trader Joe’s) then 1 slice of bread! In my search to create meals without gluten I decided I would dip thin slices of pre made polenta in egg whites with cinnamon. They turn out great and are definitely worth making when you have a craving for something bad but “should” eat something healthy!
Ingredients:
1 Tube of trader Joe’s polenta (pre made)
1 cup of egg substitute.
1 tsp of cinnamon
2 tbsp of milk
Heat the pan to medium. Spray pam (to save on calories). Add polenta that’s been soaking in egg substitute to pan. Brown the polenta on each side. Make sure you don’t move the pieces around too much (so you don’t disturb the egg coating).
Once done use some sugar free syrup or low sugar jam and BAM … a low calorie, low carb, high protein breakfast that won’t make you crave sugar all day long (like traditional comfort / breakfast foods).
This is the easy / fast way to make French toast. However I found this fancy version that sounds excellent. Of course it was from the Martha Stewart website.
