Salads and healthy food in general can get bland and boring. Adding new recipes weekly can gives you a fresh new take on old, bland food. This avocado salad is packed full of flavor and it’s simple to make! Use it to spice up those tasteless salads without breaking the bank or spending hours in the kitchen. It’s vegan, gluten free, dairy free and paleo! Everyone wins (even in California)!
Spicy Avocado Salad With Lime Vinaigrette
Dressing
2 Tablespoons of fresh lime juice
2 Tablespoons of olive oil
1 Clove of garlic, minced (1 teaspoon if you are using pre diced)
1/4 teaspoon chili powder
1/4 teaspoon of ground cumin
* Dash of cayenne pepper
* Freshly ground pepper
Salad
4 Cups of Romaine
1 small avocado pitted peeled and sliced
1 cup of cherry tomatoes, quartered
1/2 small red onion, thinly sliced (1/2 cup)
1.) In a bowl, whisk together the ingredients for the vinaigrette and set aside.
2. ) Put the chopped Romain on a plater or plate and fan out slices of avocado slices over the lettuce. Sprinkle the tomatoes and onions.
3.) Drizzle the vinaigrette over the salad and serve.
If you want to make it even more filling, try adding chicken breast or lean steak. For a more refreshing protein filled salad, add white fish and shrimp for a ceviche like dish. Avocado salad is a great way to take advantage of the fresh produce that’s all around us and to use up large amounts of avocado in a hurry. Don’t let one more avocado go bad this year!
