In the never ending search for low carb foods to eat at night; I ran across these noodles. Previously, I had been eating noodles made out of yam fiber. Although these “miracle noodles” did the trick for a very long time. It seemed as though they lacked the texture of real noodles. Although, I try to avoid soy in most cases, these can be eaten 1-2 times a week without negative side affects.

These noodles fill you up without all the extra calories. I love to use these noodles in stir fry.
- Rinse the noodles 4-5 times.
- Cook your meat first with stir fry sauce.
- Next cook your veggies.
- Put the noodles alone in a pan with stir fry sauce for 5-10 minutes. Noodles are already ready. This just gives them time to soak in the flavor from the sauce.
- Mix them all together and you have a low carb meal that is under 200 calories (depending on the sauce you use).
