Eat It – Tofu Noodles

     In the never ending search for low carb foods to eat at night; I ran across these noodles.  Previously, I had been eating noodles made out of yam fiber.  Although these “miracle noodles” did the trick for a very long time.  It seemed as though they lacked the texture of real noodles.  Although, I try to avoid soy in most cases, these can be eaten 1-2 times a week without negative side affects.

1 Serving – 4 oz (2 per package)

Calories: 20

Fat: 0.5 g

Total Carbs: 3 g

Fiber: 2 g

Protein: 1 g

    If you look closely you will see our favorite “Hungry Girl” cartoon on the back of the package.  Although, I found these on my own, you can visit her site for more of her great foods to keep you full while on your weight loss path. 

    These noodles fill you up without all the extra calories.  I love to use these noodles in stir fry. 

  • Rinse the noodles 4-5 times. 
  • Cook your meat first with stir fry sauce.
  • Next cook your veggies. 
  • Put the noodles alone in a pan with stir fry sauce for 5-10 minutes.  Noodles are already ready.  This just gives them time to soak in the flavor from the sauce.
  • Mix them all together and you have a low carb meal that is under 200 calories (depending on the sauce you use).

    Many people are turned off by the smell of the calcium chloride (it's natural) solution that forms the noodles and surrounds them in the package. After rinsing the noodles, try adding an acid such as vinegar, lemon juice, or sour salt (citric acid crystals, again, all naturally derived products.) It neutralizes the solution and freshens the noodles. On the other hand if you love the noodles as is, that's fine! Either way, they are a great blessing to the weight/hunger challenged.
