Time to shed that weekend weight with this low carb, paleo, gluten free, dairy free, Chicken Bake. You can use it as a topping over your vegetables, as a side dish, main course or even as a power protein snack! Paleo chicken bake is simple to make, fairly cheap and goes great with any side dishes.
Ingredients for Paleo Chicken Artichoke Bake
1 small jar of artichokes 1 1/2 chicken breasts or double the recipe and save some for later
4 medium sized tomatoes
1tsp on dried basil
2 cloves of garlic
Kalamata olives
Salt and Pepper
2 Tbsp of Balsamic Vinegar
2 table spoons of olive oil OR use olive oil to cut down on fat

Preheat your oven right away to 350 degrees
While that heating up – mix basil, olive oil, balsamic vinegar, and garlic.
Next mix in the olives, diced tomatoes, and artichokes. Set aside
Cut your chicken breast into bite size pieces and dash with some salt and pepper. Put into an oven safe dish.
Pour your liquid mixture or tomatoes, artichokes, olives and seasonings over the top of the chicken.
Cook for roughly 30 -35 minutes or until the chicken is cooked through.
