I had this soup on thanksgiving and could not believe how thick, rich, and creamy it was for having so few potatoes and absolutely no cream! It very filling and easy to make. I also consider it to be low carb because the recipe only calls for 2 potatoes and one apple in the huge pot of ingredients. This is a must have recipe for anyone who’s trying to shed inches without losing the filling flavor!
Ingredients
3 tablespoons of Olive oil or grape seed oil
1 cup of leeks – use only the white and light green parts. Thinly slice these into pieces.
2 1/2 pounds of celery root -These are also known as celeriac. Without weighing them, it breaks down into 3 medium sized. You’ll need to peel these, then cut them into small chunks about 1 inch in size.
2 Yukon potatoes cut into 1 inch pieces
1 medium Granny Smith apple cut into 1 inch chunks (minus the core)
2 cloves of garlic – peeled and mashed
2 teaspoons of Kosher salt
2 cups of chicken broth – low sodium and organic (I also choose one that is gluten free and MSG free)
3 cups of water
Fresh ground black pepper.
Instructions for Low Carb Celery Root, Green Apple Soup
Heat a sauce pan to medium heat and add your oil. Allow the oil to bubble then add your leaks. Place a lid over the top to catch the oil and help the leaks cook faster. Once they are translucent, add your potatoes, apples, celery root, garlic, salt and pepper. Make sure you stir them around so that all the vegetables and fruit is coated with the oil.
Next add the water, broth, to the oil, vegetable, and fruit mixture. Allow to boil.
Once the mixture boils, reduce the heat and allow it to simmer for 20 to 25 minutes.
Remove one cup of the liquid from your mixture and set aside for later.
Next, add the contents of the pan into a food processor or blender. Puree the soup until smooth.
* If you feel the soup is too thick use your excess (saved) fluid from earlier and add a little back in at a time until you reach the desired consistency.
This recipes has 8 – 10 servings. If you were to base it on 8 servings, there would be 12 grams of carbs per serving.
Fitness Tip: If you aren’t vegan try adding some bacon or turkey bacon to the recipe at the end. This will add a smoky flavor and add additional protein.
