I started off trying to make a recipe for a low carb bread. However, I ended up making a low carb, high protein tortilla! My failure turned into a win! This recipe for low carb tortillas is simple and mimics a high protein crepes. It can be used as a low-carb addition to any meat or vegetable recipe. It’s also affordable, easy, and FAST.
Ingredients for low carb tortillas
3 pastured eggs
1/4 sweet rice flour (sweet rice flour is a MUST if you want it to be a resistant starch)
1/4 teaspoon of cream of tartar (optional)
Yields (8 – 10)
5 inches in diameter.
These tortillas come out light enough to eat as a crepe, or thick enough to eat as a wrap.
If you are going to use them as a tortilla, store them separately then prepare before eating.
After cooking a batch. Wait for them to cool, then place them in an air tight container or zip lock bag for later.
