The “McLean” – Paleo Egg Sandwich

These no carb paleo egg “McMuffins” could be one of the easiest breakfasts on the go (minus the avocado).  I’ve also added  2 alternative options based on diet needs.  One with egg whites and one with whole eggs.  There’s also a couple versions for the type of meat you may want to use.  It’s a versatile recipe to suite the needs of every family member, including yourself!

Ingredients for Paleo Egg Sandwich

  • 2 tablespoons ghee, divided (plus more for greasing the biscuit cutters)
  • 1/4 a pound of your choice of ground meat.  You can use grass-fed ground beef, organic ground chicken, pork breakfast sausage. You can also skip this step and use bacon.
  • 2 large eggs (pastured preferred)
  • Himalayan sea salt
  • Freshly ground black pepper (optional)
  • ¼ cup water
  • 2  tablespoon of  guacamole OR 1/4 of a small avocado

Fitness Cooking Tips for Transforming Any Ground Meat Into Breakfast Sausage

If you decide to buy a plain ground meat, here’s a recipe to transform any meat into a sausage flavor.

Recipe For Breakfast Sausage Seasoning 

  • culinary coconut milk (optional)

*Feel free to make this seasoning in bulk! Keep it in the pantry for other meals.  Divide it into small bags or containers to keep on hand.

Using a biscuit cutter.  Grease the biscuit cutter with ghee, then press a serving size of meat into the a cookie cutter OR biscuit cutter.  If you want to make things even more fun, you can choose to make the meat into different shapes for kids.

Preheat skillet to medium heat. Place the sausage into the pan while still in the biscuit cutter.  Allow to cook on one side then remove the biscuit cutter and flip the sausage.  Cook 2 -3 minutes on each side.

Bulk Option: If you want to make these in bulk (and you don’t care very much about the perfect shape of the sausage) you can do all of them at once, then place them on a cookie sheet. You can either freeze them OR you can cook multiple patties at once in the oven at 350 degrees.  Cook all meat then set aside.

Making the “Buns”

Option 1: 

  1. Pre-heat oven to 350. Spray muffin pan with cooking spray. Crack 1 egg into each tin or pour scrambled eggs into muffin tins evenly.  Cook approximately 10-15 minutes depending on how you like your eggs.

NOTE:  If you choose the “sunny side up,” non scrambled version, make sure you cook them long enough so the yoke is solid.   This way you can eat it without the yolks spilling out while eating your paleo egg sandwich.

OPTION 2: 

Use the same biscuit cutter to cook your eggs.   Crack an egg into a bowl and whisk until scrambled.  Again, grease the inside of the biscuit cutter and place it in a heated skillet (medium low).

Pour the egg with salt and pepper into the circle and allow it cook for about 5 seconds. Next pour 1/4 cup of water into your skillet around the egg molds.  This keeps them from sticking and steams the eggs. Turn heat down to low then place a lid on your pan.  Allow to cook for 3 – 4 minutes then remove your eggs.  Remove from heat and place on a plate.  To make sure you get a perfect circle, use a knife to test the edges of the biscuit cutter before pushing the egg out.

Assemble Your Paleo Egg Sandwich

Place one egg patty on the bottom, top with sausage then guacamole or avocado, spice with salt and pepper, then top with the second egg patty.

More Fitness Tips

Not a fan of avocado?  You can add anything you like such as sautéed spinach, fresh tomato, or both! If you are trying to lower your fat intake, feel free to use egg whites instead of whole pastured eggs.

Spice it Up!

If you love spice, add in pepper flakes or cayenne pepper to your egg mixture.   You can also spread some sriracha on top of your sausage patty.

 

This recipe for paleo egg sandwiches could easily be made in bulk and placed in individual bags in the freezer.  However, to do this with the least amount of freezer burn and ice, cook the pieces and allow them to cool.  Then place them in the fridge over night.   Then assemble the biscuits and put them in Ziplock freezer bags for on the go meals.  Great for snacks, breakfasts, or even after workout high protein meals.
