In the past I wrote about “skinny noodles,” and “miracle noodles,” as they like to call them. Those were a tofu based noodles that was mixed with yam. While the texture of the noodle was a little different, it was void of excess calories and carbs but had a slight smell. Now, the same company has released another version of the “Skinny Noodle,” that doesn’t have tofu! I’m not a big fan of soy, so I decided to check it out as a way to eat healthy and keep my carbohydrates low.

Benefits of Skinny Noodles
- The best part of these noodles is you don’t really have to cook them!! SO for super hot summer months you can simply drain them and blanch them in a pan quickly with olive oil spray.
- They work well in both hot and cold recipes.
- They are gluten free
- Soy free
- Dairy Free
- Carb Free
- Sugar Free
- Cholesterol Free
- Cheap
- Lets be real, they are air with filling 😉
So what do they taste like??? That’s the beauty, they taste like whatever you want them to taste like because they soak or the flavor of whatever they are cooked in! The main difference in these skinny noodles is their texture, they have a somewhat rubbery texture without the help of the tofu from the other version. However, personally, I don’t mid the texture if I know I can have some volume with my low carb meal.
