Ingredients in Sweet Potato Pancakes – Paleo Style
2 medium sweet potatoes or yams, peeled and shredded (about 4 cups)
1 teaspoon granulated garlic
1 teaspoon dried fines herbs
1/2 cup minced yellow onion
2 large eggs, lightly beaten – you can also use egg whites but you might have to add a bit more egg whites to even out the amount. I would say 3 – 4 egg whites in place or the 2 whole eggs.
2 to 3 tablespoons coconut oil, or olive oil
Salt and Pepper to Taste
How to Make Sweet Potato Pancakes – The Paleo Way
* Shred your sweet potatoes. You can also try using our favorite Veggetti vegetable slicer. Then once they are in rings, slice them up into smaller pieces.
* Evenly distribute your slot, pepper, garlic, and herbs over the shredded sweet potatoes.
* Add in the chopped onions, and eggs (or egg whites) – Make sure the egg mixture coats all of the shredded potatoes. This way, you get a well cooked and cohesive sweet potato pancake.
Cooking Directions
Use either olive oil or coconut oil. Pour directly into heat pan. I prefer to use a spray olive oil or spay coconut oil to reduce the amount of fat used. Each pancake is roughly 1/2 a cup of the batter mixture.
Cook for 5 minutes on each side, covered. Pancakes should be golden brown. Garnish and serve.
