The weekends are a time for fun, friends, family, and usually eating!! If you’ve had a bit of an overindulgent weekend, then eating low carb on monday could be just what you need to drop some of that excess water weight and get your scale to tip back in your favor. Using low carb recipes is one of the best tools to keep your body in check! Use this great zucchini spaghetti recipe to add to your arsenal of fat burning, carb reducing recipes.

Ingredients
- 1 small onion
- Pasta sauce (choose a low sugar low calorie option)
- Lean Grass Fed Organic Beef (roughly one pound)
- 3-4 zucchinis
Directions
Chop onion into fine pieces.
Warm a pan to cook ground beef. Turn to medium heat add beef and onions.
Then cook until the beef is brown and the onions are translucent.
Add pasta sauce and any other vegetables you like. We added extra zucchini to the sauces in chunks.
Next Use a julian slicer to get the stringy texture in the zucchini. Once sliced, steam zucchini until cooked (for a faster option you can microwave zucchini). You could also pan fry the zucchini with some spray olive oil.
Add your sauce to a heaping serving of zucchini and you have a low carb spaghetti recipe!
This low carb recipe is cheap, fast, and healthy. Fitness Tip: Sliced zucchini is also a great additive to other recipes so I like to keep prepped zucchini in the fridge for things like omelets and other vegetable dishes. Zucchini also keeps for long periods of time so it won’t spoil as fast as other veggies.
