While cruising the isles at Traders Joe’s it’s easy to get sucked into their seasonal comfort foods. In my quest to eat based on my food allergies, I’ve learned to eat low glycemic foods to fight cravings for flour and other carb packed foods. If you can’t seem to kick your hunger for carbs then it’s best to find ones that you know won’t make you crave. Polenta (a corn product) can be used in several ways and can also be purchased at your local Trader Joe’s already cooked!
Each serving has 60 calories and only 13 carbs (great for night time eating). It sounds weird but if you get the pre made tube at Tj’s and cut it into thin slices… you can pan fry it (with pam) and make them into little pan cakes with sugar free syrup. Unlike, real pancakes, these ones don’t send your blood sugar through the roof!
This other recipe was done at night in efforts to find a low calorie way to make pizza. Here’s what I did…
I sliced the polenta tube (bought at TJ’s) into very thin slices.
Next I pan fried them with pam until they were crunchy
Put tomato sauce on them and light cheese
Stuck them in the oven at 400 degrees to crisp the polenta even further and melt the cheese.
They turned out well and satisfied my cravings for typical “bad food” without eating gluten. The trick to making this recipe work for you is to cut the polenta thin enough so it can crisp easily. Too thick, and it still remains squishy in the middle (not so good when it’s supposed to mimic pizza crust). This recipe was extremely low calorie and low fat.
