I saw these sprouted corn tortillas on a healthy cooking show. I was confused as to why “sprouted” was so much better then regular corn tortillas. Through my own research I found that sprouted is (of course) less processed and allows your body to absorb more minerals and vitamins. The “over processed” foods of today are robbed of some of the natural vitamins. They are however fortified. This is what one of the most prominent brands has to say about their Sprouted foods. It’s pretty interesting stuff!
The process of germination changes the composition of grain and seeds in numerous ways. Sprouting increases vitamin content. Sprouting neutralizes phytic acid – a substance present in grains – that inhibits absorption of nutrients and more important Sprouting neutralizes or “predigests” if you will, grains through enzymatic activity. The enzymes produced during our natural sprouting process “in effect” breaks down amino acid protein bonds to promote digestibility of the entire grain.
Sprouted grains = Low Glycemic. Low glycemic is the way to go if you are looking to lose weight. Since sprouted grains are already “pre digested” due to the sprouting process; the break down of the grains doesn’t spike insulin levels as much as processed foods.
Guess I’ll be trying these out in the near future! Changing your processed breads to sprouted is an easy way to stabilize your blood sugar, lower cravings, and help you lose weight without even having to think about it!
