Eating Paleo, low carb, and healthy can leave you craving sweets. It’s ok to indulge once in a while if you are still following the guidelines right!? Paleo desserts during the holidays could keep you from gaining those horrible inches. Better to cheat in a healthy way then load up on horrible amount of carbs and calories! Use these amazing flour less, blender muffins to cheat clean while eating these Paleo Chocolate Chocolate, peanut butter -scotch mini muffins. This paleo dessert is free of refined sugars, flour and oil. If you want to keep it Paleo, use the vegan chocolate chips from enjoy life (1/2 a cup) and omit the butterscotch chips. If you haven’t tried the enjoy life brand, it’s by far the best brand if you are trying to go gluten free and dairy free. It’s also soy free and nut free.
Ingredients For Paleo Muffins
1 ripe medium sized banana 1 Large Egg 3 tablespoon of honey 1/2 cup of creamy peanut butter 1/4 tsp of Baking soda 1 pinch of salt 1/4 cup of Enjoy Life Vegan Chocolate Chips (these are amazing) 1/4 cup of Butter Scotch Chips 1 tablespoon of vanilla extra (I use gluten free vanilla)
Directions for Mini Muffin Paleo Desserts
Preheat oven to 400 degrees. Mix the egg, banana, peanut butter, honey, vanilla, and baking soda in a blender. You could also combine these using a food processor or bullet. After blending you should have a smooth, thick soup-like, light brown batter. Next Stir in the chocolate chips by hand. Using the blender will chop them into tiny pieces. Use mini muffin pans. Spray some non stick spray inside each well. Or you can grease them lightly by hand. Fill each muffin tin 3/4 full and spindle a couple chips on top for added visual affects Bake for 8 minutes. To add some additional appeal. Sprinkle a couple chocolate chips on top Each mini muffin contains less then 100 calories.
