Low Carb Monday – Pumpkin Pie Protein Shake

Fall is almost here but the weight gain doesn’t have to be!  You can still enjoy all the flavors of the season without all the empty calories and high carbohydrate foods!  A little creativity goes a long way and will make a big difference through out the fall and winter months ahead.  Use this pumpkin pie protein shake to indulge in the flavors without stacking on the inches!

Benefits of Eating Pumpkin 

Packed full of vitamin A, and carotenoids, pumpkin aids in vision, heart health and immunity.  It’s orange color isn’t just an indicator of fall, it’s also a powerful natural healer which helps to decrease the degenerative eye conditions that can lead to eventual blindness (source).  Vitamin A from pumpkins helps to clear and protect skin.  It also helps to maintain healthy teeth and bones.

INGREDIENTS

  • 1/2 cup of pumpkin puree
  • 6-8 ice cubes
  • 1 large banana (optional)
  • 6 oz vanilla yogurt (optional)
  • 1/2 tsp pumpkin pie spice
  • 1 tsp of honey, or you can use liquid stevia
  • 3 Tbsp milk of your choice

Low Carb Option: Use half a banana and 1/4 of an avocado.  You can also choose to omit the banana all together however you may need to add in additional zero carb sweetener such as liquid stevia.

TOPPINGS (optional)

  • Pinch nutmeg
  • Whipped cream (optional)

DIRECTIONS

Toss all ingredients into a blender (pumpkin, banana, ice, yogurt, sweetener, milk, and spices).  Pulse ingredients until smooth.
Pour into a glass and top with whipped cream and pinch of nutmeg. ENJOY!
**If desired, add a scoop of vanilla protein powder before blending. **

Fitness Tips For Altering this Pumpkin Pie Protein Shake

*Extra Frothy Option: Freeze the banana before hand.  Add it to the shake as instructed

Lower the Carbs:  Omit the whipped cream, opt for stevia instead of honey, and use a low sugar or plain yogurt option. For the protein shake, make sure you choose a low carb option.

Dairy Free, Bulletproof, Paleo Option:  Use a vegan protein shake if you decide to boost the protein.  Use coconut yogurt instead of traditional yogurt options. For the milk, opt for a nut milk such as almond, cashew, rice, or macadamia nut milk.
