Open-Faced Egg and Tomato Bagel Stacks

Toasted whole wheat bagels topped with green, leafy lettuce, baked egg ‘squares’ spread with a caper-seasoned spread then a slice of ripe red tomato – attractive enough for company yet simple enough for busy weekday breakfasts

Hands On:10 minutes
Total:20 minutes
Makes:4 servings (1 open-faced bagel each)

   PAM® Original No-Stick Cooking Spray
1  cup Egg Beaters® with Yolk
2  tablespoons Fleischmann’s® Original Spread-tub
2  tablespoons chopped capers
1/4  teaspoon ground black pepper, divided
2  whole wheat bagels, split horizontally and toasted
4  green leafy lettuce leaves, washed and patted dry
4  large tomato slices

Directions


  1. Preheat oven to 325°F. Spray 8×8-inch glass baking dish with cooking spray.
  2. Pour Egg Beaters into prepared dish. Bake 12 to 15 minutes or until center is set. Cool slightly; cut into 4 squares.
  3. Meanwhile, prepare caper spread by combining Fleischmann’s, capers and half of pepper in small bowl; set aside.
  4. Place a lettuce leaf on each bagel half followed by an egg ‘square’. Spread 2 teaspoons of caper spread over each egg. Finish by placing a slice of tomato on each stack. Season tomatoes with remaining fresh ground pepper. Serve immediately.

Cook’s Tips


To enjoy this on busy weekday mornings, prepare the caper spread and Egg Beater squares on the weekend and refrigerate. Heat individual squares during week by microwaving one portion on HIGH about 20 seconds. Assemble bagel stack as described above.

Spinach and Feta Cheese Scramble

Creamy, cheesy scrambled Egg Beaters and fresh spinach

Makes:5 servings (about 1 cup each)

   PAM® Original No-Stick Cooking Spray
3  cups chopped fresh spinach
1/2  teaspoon ground black pepper
1  carton (15 oz each) Egg Beaters® with Yolk
1/2  cup crumbled reduced fat feta cheese
   Chopped fresh tomato, optional

Directions


  1. Spray medium skillet with cooking spray. Heat over medium-high heat; when hot add spinach and pepper. Cook 2 to 3 minutes or until spinach wilts.
  2. Add Egg Beaters and cheese. Reduce heat to medium; cook 1 minute without stirring. Then stir occasionally until eggs are set, about 2 to 3 minutes.
  3. Serve immediately. Garnish with tomatoes, if desired.

Breakfast Burritos with Tomato-Basil Topping

Flour tortillas packed with hash browns, scrambled eggs, tomato,
fresh basil and Cheddar cheese

Makes:4 servings (1 burrito each)

   PAM® Original No-Stick Cooking Spray
1  cup frozen Inland Valley® Southern-Style Hash Browns
1/4  cup finely chopped onion
1  cup Egg Beaters® Original (1 cup = 8 oz)
1/8  teaspoon ground black pepper
1  large tomato, finely chopped
1  tablespoon finely chopped fresh basil
4  flour tortillas (8 inch), warmed
1/2  cup shredded reduced-fat Cheddar cheese (1/2 cup = 2 oz)

Directions


  1. Spray medium nonstick skillet with cooking spray; heat over medium heat. Add hash browns and onion; cook 9 minutes, or until potatoes are golden brown, stirring frequently.
  2. Add Egg Beaters and pepper; mix well. Cook 3 minutes, or until Egg Beaters are slightly set; stir. Cook an additional 6 minutes, or until Egg Beaters reach desired doneness, stirring occasionally.
  3. Combine tomato and basil; set aside. Spoon Egg Beaters mixture evenly down centers of tortillas; top evenly with cheese and the tomato mixture. Fold in opposite sides of each tortilla; roll up burrito-style.
