Fish Rub Recipe
Martha Stewart has a great versatile recipe for a fish rub. Many of the fish seasoning also work well with white meats such as pork and chicken, so feel free to whip up a batch of this mixture to use for months to come.
INGREDIENTS
- 1 teaspoon ground cumin
- 1 tablespoon dried oregano
- 1 tablespoon chili powder
- 2 teaspoons coarse salt
- 4 tablespoons (1/4 cup) extra-virgin olive oil
- 1/4 cup finely chopped cilantro, plus sprigs for garnishing
- 2-pound fillet of striped bass or red snapper, skin intact
- Lime wedges, for garnishing

- 8 cloves garlic, minced
- 1 tablespoon extra-virgin olive oil
- 2 teaspoons stone-ground mustard
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground pepper
- 1/2 teaspoon freshly grated lemon zest
