Ground Turkey Spaghetti with Spaghetti Squash
Ingredients
1 small spaghetti squash, halved and seeded
1 tablespoon olive oil
1/2 minced onion
2 cloves garlic, minced
12 ounces lean ground turkey
1 cup grape/cherry tomatoes
2 teaspoons crushed red pepper flakes
1 can of your favorite spaghetti sauce
Directions
Preheat oven to 350 degrees F
Slice the squash in half long ways (this is the most difficult part of the meal J) Place each squash half cut side down in a baking dish with half and inch of water. Bake uncovered for about 35 minutes or until a fork goes easily into the shell. Allow to cool and scoop out the strands of squash with a large spoon/fork, save to add to sauce when finished.
Heat the oil in a skillet over medium high heat. Add the onion, garlic and sauté for 2 or 3 minutes. Add the turkey and cook for 4 minutes. Add the tomatoes and cook for another two minutes. Finally add can of your favorite spaghetti sauce.
Add the red pepper flakes and simmer for 5 minutes.
I like to add the spaghetti squash right into the sauce mixture, if you prefer you could just top the squash with your sauce mixture and enjoy.
